España! Spanish Wines, Gold Medal Cuisine, and Flamenco

Time: 6:00 pm
Price: Members & First Guest: $105.00** per person

Spring is almost here! But until then, a fiery Spanish themed evening will warm us up. Spain is the world's third largest wine producing country. From the cooler, hilly areas and the warmer southern regions, come wines of elegance and distinction. Brenda Dean and Jerome Chomos have both visited Spain recently and will share some of their tasting experiences during the evening. Welcome back to the William Pascoe room at the Bessborough Hotel, where Chef Chris Hill, the 2014 Gold Medal Plates Saskatoon winner, will create a five-course meal to pair with a series of curated Opimian Spanish wines from 2006 to 2012. Chris, originally from Saskatchewan, and most recently from the Chateau Lake Louise, is the new Executive Chef at the Bessborough. He will introduce his courses and perhaps tell us a little about the recent national Gold Medal Plates competition in Kelowna. While there are many dance forms associated with Spain, flamenco and tango are well known. Kari Alba & Alma Flamenca are here tonight to warm up our blood through a demonstration. This event will be enticing to many members so please respond promptly to the invitation. We look forward to welcoming each of you to Spain in Saskatoon!

Wine is magical and in this class we’ll learn the magic of changing grapes into wine. The evening will be led by Opimian Area Rep Valerie Bradshaw, who recently received a certificate status from the Alexandre Schmidt Olfactory Education system. Valerie has her accreditation from The French Wine Society and The Spanish Wine Academy, and has achieved Level 2 Sommelier status with the International Sommelier Guild. Valerie is currently at the Diploma level study of Wine & Spirit Education Trust (WSET) and passed with Merit the Level 3 Advanced Certificate in Wine & Spirit Professional Studies. Winemaker's Dilemma

Time: 6:30 pm
Price: Members & First Guest: $165.00** per person

Almost all wine estates grow several types of viniferous grapes, but someone still has to make the wine! The winemaker sorts out the fruit and decides which will make great wine, and how. Additionally, what if one of the varietals needs a little something extra? At this event we explore the varietals that are commonly used to create iconic wines and the food that they are best paired with. We are delighted to invite you to the Sawridge Inn on March 14th for the “Winemaker’s Dilemma”. Chef Dale, Chef Christina and the Culinary Staff have continued an amazing tradition and created another spectacular menu. To start, we have Seared Rare Ahi Tuna skillfully paired with a perfect Bordeaux Blanc. Second course is Atlantic Lobster & Smoked Beef Tongue Salad, paired with an excellent and complex Chilean Red.
The main course is Duck Three Ways, seared Foie Gras, Leg Confit and an exotic “Pot Pie” which we have matched to a robust Red Bordeaux. Chef Candice and her team have created another amazing dessert of Passion Fruit Bavarois being complimented with an excellent Pinot Gris from the Alsace.Fort McMurray Opimian is well into the swing of the season and sure to make the winter seem shorter. Please join Margaret and I at the Sawridge Inn for the “Winemaker’s Dilemma”.

Halifax, Nova Scotia
A Taste of Chile

Time: 6:30 pm
Price: Members & First Guest: $109.00** per person

Join us in celebrating Chile’s summer season at The Halifax Club on Saturday, March 28th, 2015. This evening offers Opimian members and guests the opportunity to experience grape varieties from this well-established wine region. With its incredible 4,200 kilometre coastline, Chile has an amazing diversity of climate and geography. With the Atacama Desert to the north and the desolate ice fields of Patagonia to the south, winemaking in Chile is confined to a small central belt of the country with a more moderate climate. Chile offers fruity, oaky Chardonnays and juicy, ripe Cabernet Sauvignon and Merlot, to name only a few. One of the most interesting names on a Chilean label is Carmenére, a variety once believed to be Merlot, but now discovered to be a forgotten Bordeaux grape which has been living happily in Chile all along. It makes a vibrantly fruity and deeply flavoured wine. Throughout the evening we will be enjoying five different wines from this region. Executive Chef Nelson Francis of The Halifax Club has designed a delicious three-course dinner to compliment these incredible Chilean wines. Enjoy this wine tasting and dining experience while soaking up the history and ambiance of the historic Halifax Club. Bring a group of friends and introduce them to the enjoyment of being an Opimian!
